Interview with Yvette Chua - D'zerts Cafe at 30 Jalan Pari Burong



Chef Yvette Chua is the Pastry Chef at D'zerts Cafe. She used to be a Home Economics teacher for 4 years with Cedar Girls' Secondary School before joining D'zerts Cafe as its Creative Resident Pastry Chef. 

Chef Yvette enrolled on a two years' Program at the prestigious Culinary Institute of America (CIA) (with notable Alumni including Chef Cat Cora, Chef Andrew Zimmern,  Chef Anthony Bourdain ) at its Singapore campus, and was the pioneer batch student in 2011, having just graduated in 2013. 

The  CIA modules include : Cuisines of America, Cuisines of Europe, Cuisines of Asia, Pastry Making. Of the CIA modules, Chef Yvette loved Kitchens of Asia the most, and takes great delight in making Dim Sum, Japanese Cuisine, pastries. 

As a teenager, Chef Yvette enjoyed making pastries, cakes and desserts. She is the only professional Chef in her family. Her three role models who inspires her in her career include : 

  1. Two Michelin stars  Chef Alvin Leung, whom she trained under Bo Innovation for 4 months in Hong Kong, 
  2. Three Michelin stars Chef Proprietor Heston Brumenthal from The Fat Duck Restaurant (Bray, Berkshire, England), 

  3. Chef Janice Wong from 2am : dessertbar. 

There is no standard menu at D'zerts Cafe, Chef Yvette whips up new recipes in promptu depending on her inspirations,  thereby enabling menu updates every one to two weeks. That means about 8 different new items make their debut on the menu every month. Chef Yvette gets her inspirations from her CIA lecturers, and the food establishments she used to work for. 

Items that stay on the core menu are the Best Sellers. Customers' feedback play a huge role in influencing which items stay. Chef Yvette focused on getting more exposure training at other food establishments and bringing them back to D'zerts Cafe.

D'zerts Cafe boasts of several great tasting Signatures such as the Movie ComboThere is no flavoring or additives, Chef Yvette makes her own pop corn, and basically extract the essence of the pop corn to make the mousse for the Movie Combo.

Matcha Latte is another Signature at D'zerts Cafe. 
The idea came from combining Matcha and Latte to create a totally unique flavor.  

On a Date - instead of the usual Sticky Date Pudding, Chef Yvette extract out the essence to create the original taste of the Sticky Date Pudding. 


Passion Fruit Tart 

Orange Chiffon Cake : unlike other bakery and cafes that that serve Chiffon that is light, the chiffon at D'zerts Cafe is dense. As the Orange Chiffon was not available on my visit, I had the Strawberry Chiffon below - just as dense as the Orange Chiffon.
